East coast IPA – a stepping stone between the British and West Coast IPA, so it has more of an emphasis on the piney hop flavour coupled with a maltier backbone. It’s golden in colour with aromas of pith, pine, honey, and a bit of bread.

India Pale Ales (IPAs) need to be paired with food with similarly strong tastes so they don’t overwhelm the dish. The bitterness of an IPA can also cool things down, so an ideal match would be with something strong and spicy, like a classic Indian curry, Mexican food (like burritos & fajitas), or ribs with a spicy BBQ sauce. IPAs also have the ability to cut through heavy, fatty foods, so they’re great with things like French fries or chicken wings, in addition to milder blue cheeses (like Gorgonzola or Cambozola). You could also even consider an IPA when eating dessert! Carrot cake, caramel apple tart or even a ginger spice cake would make a lovely accompaniment to a traditional IPA like Hopsy Dazey.
